Susi Díaz, 3 Soles Guía Repsol en Elche

Susi Díaz, from the restaurant ‘La Finca’ in Elche (Alicante), is the new 3 Soles Repsol of the Valencian Community. Additionally, seven new restaurants in this region have been awarded with 1 Sol: ‘Memoria Gustativa’ and ‘Xanglot’ in Valencia; ‘Anhelo’ in Castellón de la Plana; ‘Ossadía’ in Denia; ‘Daluan’ in Morella, and ‘Open’ and ‘La Ereta’ in Alicante.

With these new additions, the Valencian Community now has a total of 65 award-winning restaurants: 6 with Three Soles, 13 with Two Soles, and 46 with One Sol.

The awards were announced at the gala held at the Teatro Guimerá in Santa Cruz de Tenerife.

The new 3 Soles Guía Repsol 2025 have been awarded to Susi Díaz, chef of the restaurant ‘La Finca’ (Elche, Alicante), and Pedro Sánchez, chef of ‘Bagá’ (Jaén).

Susi Díaz’s emotional cuisine at ‘La Finca’, with 40 years of experience, has been highly praised: «Creating a dish with memories is more important than thinking about the future. There is a recipe from my grandmother that made me happy, a mackerel escabeche, and I have reimagined it with today’s techniques and timing control, respecting the product to the fullest so that it arrives at the table in its fullness and just the aroma awakens the diner,» said the chef.

Additionally, the 17 new 2 Soles Guía Repsol reflect the diversity of a pantry that enhances the creativity of a cuisine that has chosen to be increasingly transparent: ‘Alevante’ (Chiclana de la Frontera), ‘Bakea’ (Mungia), ‘Cebo’ (Madrid), ‘Enigma’ (Barcelona), ‘Esperit Roca’ (Sant Julià de Ramis), ‘Kamín’ (León), ‘Kappo’ (Madrid), ‘L’Aliança d’Anglés’ (Anglés), ‘La Tasquería’ (Madrid), ‘Laia Erretegia’ (Hondarribia), ‘Lana’ (Madrid), ‘Local de Ensayo’ (Murcia), ‘Narru’ (Donostia), ‘Poemas by Hermanos Padrón’ (Las Palmas de Gran Canaria), ‘VelascoAbellá’ (Madrid), ‘Verdejo’ (Madrid), and ‘Villa Retiro’ (Xerta).

MORE AFFORDABLE MENUS

Among the new 1 Sol Guía Repsol 2025, more and more young chefs are opting for shorter gastronomic menus and menus designed for sharing at a more «affordable» price. This trend can be seen in restaurants like ‘Narea’ (Vejer de la Frontera), where Alejandra Gnisci and Jaime Batista offer a delightful journey through Italy, Argentina, and Andalusia with a seven-course menu for 38 euros; or in ‘Alberca’ (Trujillo), where young Mario Clemente, trained alongside Dani García and Bittor Arguinzoniz, surprises with a charcoal-based menu starting at 45 euros.

At ‘Anhelo’ (Castelló de la Plana), Cristian Granero encourages diners to visit during the week with his D’Uixó menu, featuring eight courses for 39 euros, while the proposal of ‘Cocina con Mimo’ (León) narrates the gastronomic journey of «Short and Long Distance» by Javier del Blanco and Ángela Trobajo with menus starting from 39 euros. And at ‘Estirpe’ (Yecla), Juan Azorín and Ana Sánchez update traditional recipes for 40 euros with seven courses that delight diners.

Additionally, this year’s Sustainable Sun Awards #AlimentosdEspaña have been awarded to Ángel León (‘Aponiente’, El Puerto de Santa María. 3 Soles Guía Repsol), Ignacio Echapresto (‘Venta Moncalvillo’, Daroca de Rioja. 2 Soles Guía Repsol), Jordi Esteve (‘Nectari’, Barcelona. 1 Sol Guía Repsol), and Pedro Hernández (‘El Duende del Fuego’, Los Llanos. Recommended by Guía Repsol).

With these new additions, a total of 789 restaurants make up the universe of Soles Guía Repsol (44 Three Soles, 176 Two Soles, and 569 One Sol) and 1,488 Recommended establishments (including 208 new additions). Catalonia (115), Community of Madrid (102), Andalusia (77), Basque Country (73), Valencian Community (65), and Castile and León (58) are the regions where the most Suns shine.
